Blue 2 (Indigotine) is an artificial food coloring approved by the FDA, but studies by the NTP have shown some evidence of tumor formation in male rats, raising safety concerns. The EFSA has also set an Acceptable Daily Intake (ADI) for this additive, acknowledging potential risks with higher consumption.
